Italian Chicken

  • 520 gskinless, boneless chicken breast halves – cubed
  • 1tbsp clove garlic, chopped
  • 138g fresh green beans – rinsed, trimmed and steamed
  • 1 tomato, chopped
  • 2 ½tbsp coconut oil
  • 1 ½tbsp minced fresh basil

Prepare the ingredients.

Stew the beans in a saucepan.

Heat coconut oil in a large skillet over medium high heat. Add garlic and saute until aromatic oils are released, then add chicken and cook through until no longer pink.

Stir in tomatoes and basil, bring to a boil and reduce heat to low and simmer for another 3 to 5 minutes.

Finally, stir in steamed beans and serve.
