Vegetable Eggs

  • 3 eggs, beaten
  • 1 ½tbsp chopped onion
  • 1 chopped tomato
  • 1 ½ chopped pepper
  • 1 ½tbsp coconut butter

Prepare the ingredients.

Stir the eggs.

Melt coconut butter in a skillet over medium heat. Saute onions until translucent.

Add the eggs and cook, stirring occasionally to scramble.

When eggs appear almost done, stir in chopped tomatoes and peppers and season with salt and pepper.

Serve.
