Barbecue Chicken Salad

  • 161g lettuce
  • 630g skinless, boneless chicken breast halves
  • 2 ½tbsp  red onion, diced
  • 2 ½tbsp sweet corn, drained
  • 1 large red bell pepper, diced
  • 2 ½ celery, chopped
  • 1 ½tbsp olive oil

Prepare the ingredients and preheat grill for high heat.

Grill chicken 10 minutes on each side, or until juices run clear. Remove from heat, cool, and cube.

In a large bowl, toss together the chicken, cucumber, red bell pepper, onion, and corn.

Pour over the chicken and veggies.

Stir and chill until ready to serve.
